This year Iíve been very lucky in competitions. Firstly, I entered the Tesco Young Cook of the Year award competition. A few months later, I received a certificate of merit for my recipes. 
Smoked Salmon au Gratin

1 large carton cream
1 side smoked salmon sliced thinly
8 large golden wonder potatoes
1 large onion sliced
3 cloves garlic crushed
Salt and Pepper
1 oz of butter
6 oz grated cheese
 

Par boil potatoes for 15 minutes
Peel and slice thinly
Grease large cooking dish with butter.
Layer potatoes at bottom of dish. Add onion, garlic and seasoning. Put a layer of smoked salmon over potatoes. Repeat process and cover with another layer of potatoes. Pour cream over dish and cook for 1 hour at 200 degrees C. Put grated cheese over dish and cook for 15 minutes until cheese melts.

Ginger and orange surprise

1 large pkt ginger nut biscuits
Freshly squeezed orange juice
1 large carton of cream whipped
2 oz grated chocolate
 

Method:
Soak biscuits in orange juice for about 20 seconds until wet. Sandwich together with cream and lay on oblong on serving dish. Repeat until all biscuits are used. Cover with cream and sprinkle with grated chocolate.
 

A nice alternative to orange juice is to use port or sherry to soak biscuits in.
